We don’t know if you’ve noticed, but it’s getting colder and colder out there (for you north-hemisphers, anyway) with every passing day. Which of course puts us in the mood for a nice, warm and cozy cup of pumpkin spice latte! Vegan, of course. Homemade, of course. It’s so much better than the one you just buy outside, trust us!
So turn on the fireplace (or just click here), put your favorite sweater on and get in the kitchen! (Or—you can also just read the recipe and contemplate on making it one day. That’s okay too).
Here’s how to make a steaming, comforting, super delicious cup of vegan pumpkin spice latte:
Vegan pumpkin spice latte recipe
You’ll need:
- 1 cup unsweetened almond milk (or any other creamy plant-based milk)
- 2 tbsp pumpkin puree (you can buy it or make it by boiling a pumpkin until soft and pureeing it)
- 1 tbsp maple syrup
- 1/2 tsp molasses
- 1/2 tsp vanilla extract
- pinch of sea salt
- 1 shot of your favorite espresso/however you like your coffee
- If you wanna make your own pumpkin spice: 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/4 tsp ground nutmeg, 1/4 tsp ground cloves
Preparation:
Cook the milk on medium–low heat until it simmers lightly, add the molasses, vanilla extract, maple syrup and most of the pumpkin spice and continue cooking for about 1–2 minutes. Mix in the pumpkin puree. Pour the coffee into your favorite mug, add everything else and decorate with the remaining pumpkin spice.
