Let's celebrate this day with a nice VEGAN healthy and eco-friendly quinoa & black bean burger recipe!
1. Coat a skillet with 1 tbsp olive oil and sauté 2 garlic cloves, 1 red chili and 1 chopped onion for 5 minutes or until onion is tender.
2. Add 1/2 tsp ground coriander and 1 tsp smoked paprika and cook for 2-3 more minutes.
3. Place this mixture in a blender with 1 cup drained black beans and a pinch of salt. Blend in short bursts until you achieve a rough paste that is smooth and wet but not runny.
4. Pour into a bowl and add 1 tbsp flour and 5 tbsp cooked quinoa. Mix well.\n\n5. Chill in the fridge for at least one hour.
6. Shape 1/4 of the chilled mixture into a ball and place in a heated pan. Use a spatula to press into a patty. Cook for 2-3 minutes on each side, reshaping as needed. When the edges are crispy and dark and the middle is hot, your burger is ready to enjoy!
